I have been fixing the same dish for the past week. I saute lots of onion in some EVOO until slightly brown. I then add mushrooms and saute a minute or two. I add a protein (like shredded chicken or cooked ground turkey) and add some chopped fresh sage. It is absolutely delicious. It tastes like Thanksgiving in a dish. I had this for lunch today, with some fresh bell peppers, and cold shredded chicken with one boiled egg. It was a very satisfying lunch.
