Michael's least favorite foods

Michael's least favorite foods are:
  1. tuna noodle casserole
  2. grilled cheese and tomato soup
  3. any soup
  4. pot pie
  5. smoothies
Tuna noodle casserole . 6 oz. egg noodles (wide or extra wide), cooked*1 small can of tuna, drained and flaked with a fork1 can cream of mushroom soup½ cup milk1 cup frozen peas, cooked½ cup (or more) grated sharp cheddar cheese1 cup fresh bread crumbs cooked in 1 T. butter

This is the ultimate homemade chicken pot pie recipe. The ingredients and the process are simple. Follow them and you will get one of the tastier pies ever.


When we were first married, I made tuna noodle casserole all of the time. My mom made it all of the time when I was growing up. I always loved it. It was a long time before I realized that Michael hated tuna noodle casserole...he does not like cooked tuna at all. Oops!

For some reason Michael does not like grilled cheese and tomato soup. The boys and I love it; although I have not had it in a long time. The best tomato soup is the fresh one called tomato bisque.

Actually, Michael does not like soup at all. I could literally have soup and a salad every single day. He eats it, but kind of makes faces as he does it.

Michael's least favorite food, besides tuna noodle casserole, is pot pie. I would also sometimes make this when we were first married, and he would choke it down. I loved pot pie a lot!

Michael is not a smoothie person at all...he would much rather chew his food. I made a green smoothie one time that not one of us could get down. I think we ordered pizza that night. (the smoothie was made of all veggies...pretty disgusting!)

Christmas Crack

I have never made this recipe, but I have seen it all over blogs the past few years. We may have to make it this year...

Christmas Crack

Prep time:  
Cook time:  
Total time:  
Serves: 25-30 pieces
Ingredients:
  • 40 saltine crackers (approx. 1 sleeve) or Town House club crackers or Ritz crackers
  • 1 cup (2 sticks) unsalted butter
  • 1 cup dark brown sugar
  • 2 cups chocolate chips
  • 1 cup chopped pecans (optional)
Instructions:
  1. Preheat oven to 400 degrees.
  2. On a 9 x 13" jelly roll pan lined with parchment paper, line the saltine crackers side by side until the entire pan is filled.
  3. In a saucepan, melt butter and sugar together. Bring to boil then let boil for 5-7 minutes, do not stir but also make sure it doesn't burn.
  4. Pour the contents of the pot (which made caramel because brown sugar + butter = caramel) evenly over the saltines then place in oven to bake for 5 minutes.
  5. In the meantime, in a microwave safe bowl, gently melt the chocolate, stirring in between 30 second intervals.
  6. Remove pan of saltines from oven and pour chocolate evenly on top of the caramel, spreading it evenly and smoothing it out. If you're using chopped pecans or nuts, this is now the time to sprinkle them on.
  7. Let the toffee and chocolate cool completely. I popped mine in the fridge for about an hour.
  8. Once cool, break into 2 inch pieces.
  9. Store in an airtight container if you have any leftovers.

If you want this tonight, Michael, you will have to pick up the ingredients on your way home from work.

Pumpkin cream cheese bread

This morning I made pumpkin cream cheese bread. I actually made a pumpkin bread recipe, and then I made a cream cheese icing to put in between the bread. I love pumpkin with cream cheese.

The boys absolutely loved it. I can see that I will have to make this quite often. It is such a wonderful fall dessert/snack.

Trader Joe's New Finds

Today Jar had an orthodontist appointment (he found out that he gets his braces off in 8 weeks). We decided to go to Trader Joe's before his appointment. We loaded up on lots of good stuff. I love shopping there so much. Here are some of our new finds.

Peppermint Bark

My sister sent us some peppermint bark for Christmas. It really is the best peppermint bark that we have had. Even Jar and Michael love it, and they don't like peppermint things.

Yummy Chocolate Bars

I got some special chocolate bars from Vitacost (when I ordered soap). They are really good...and low glycemic. Michael would not like them though because besides chocolate, the rest of the ingredients are coconut (coconut butter, coconut oil, and coconut flakes).

One of our favorite easy foods

This past weekend, I made BLT sandwiches for lunch. It is one of our favorite easy things to make (although Jar does not really like them much). But, Michael, Cam, and I love them.

Thanksgiving 2014

Thanksgiving was spent with family at Mom's church gym and kitchen area. It works great for all the family to get together.  We had a good time with family...eating, talking, and playing games. The food was delicious as usual.
